Making a chicken and vegetable risotto for a baby requires some adjustments to ensure it's suitable for their age and dietary needs. Here's a simple and baby-friendly recipe:


Ingredients:

1.    1/4 cup Arborio rice

2.    1 cup low-sodium chicken broth

3.    1/4 cup cooked and finely shredded chicken (ensure it's boneless and skinless)

4.    2 tablespoons finely chopped vegetables (such as carrots, peas, and zucchini)

5.    1 tablespoon finely chopped onion (optional)

6.    1 teaspoon olive oil

7.    1/4 teaspoon dried thyme (optional)

8.    1/4 teaspoon garlic powder (optional)

9.    1-2 tablespoons grated Parmesan cheese (optional)

10. Salt and pepper to taste (optional)


Rice Cooker

Instructions:


1.    Prepare Ingredients:

  • Cook and finely shred the chicken.

  • Wash, peel, and finely chop the vegetables.

2.    Sauté Vegetables:

  • In a small saucepan, heat the olive oil over low-medium heat.

  • Sauté the finely chopped onion until it's soft and translucent.

  • Add the finely chopped vegetables and continue to cook for a few minutes until they are tender.

3.    Add Rice:

  • Add the Arborio rice to the saucepan and stir to coat the rice with the vegetables and oil.

4.    Cooking Process:

  • Gradually add the low-sodium chicken broth to the rice, one tablespoon at a time, stirring frequently.

  • Allow the rice to absorb the liquid before adding more broth. Continue this process until the rice is cooked and has a creamy consistency.

5.    Add Chicken:

  • Stir in the finely shredded chicken and continue to cook until the chicken is heated through.

6.    Seasoning:

  • Add thyme, garlic powder, salt, and pepper to taste. Be mindful of the baby's sodium intake, so go easy on the salt.

7.    Optional Additions:

  • If your baby is ready for dairy, you can add a small amount of grated Parmesan cheese for extra flavor.

8.    Cool Before Serving:

  • Allow the risotto to cool to a suitable temperature before serving it to your baby. Make sure it's not too hot to avoid any burns.
