Tomato and beef risotto for baby


Here's a simple recipe for tomato and beef risotto suitable for a baby:


Ingredients:

  • 1/4 cup Arborio rice (or any short-grain rice suitable for risotto)

  • 1/4 cup lean ground beef, cooked and finely minced

  • 1/2 cup low-sodium beef or vegetable broth

  • 1/4 cup pureed tomatoes (you can use fresh tomatoes, peeled and blended, or canned pureed tomatoes)

  • 1 tablespoon grated Parmesan cheese (optional)

  • 1 teaspoon olive oil

  • 1 small onion, finely chopped (optional)

  • 1 clove garlic, minced (optional)

  • 1 tablespoon finely chopped fresh basil or parsley (optional)

  • Salt and pepper to taste

Instructions:

  • In a small saucepan, heat the olive oil over medium heat. If using onion and garlic, sauté them until softened, about 2-3 minutes.

  • Add the Arborio rice to the saucepan and stir to coat the grains with oil. Cook for another 1-2 minutes, stirring frequently.

  • Pour in the beef or vegetable broth, and bring the mixture to a simmer. Reduce the heat to low and cover the saucepan. Let it cook for about 15-20 minutes, or until the rice is tender and creamy, stirring occasionally.

  • Stir in the minced cooked beef and pureed tomatoes, and continue to cook for another 2-3 minutes until heated through.

  • If desired, add grated Parmesan cheese for extra flavor and richness.

  • Season with salt and pepper to taste, and stir in fresh herbs if using.

  • Let the risotto cool slightly before serving to your baby. Make sure it's not too hot and always check the temperature before feeding.
